Dim Sum with Tofu, Glass Noodles, and Vegetables
The Tofu Phoenix Eye gets its name from its shape. In Cantonese, this fold shape is called 风眼饺 (Fung Ngaan Gaau), which translates to "Phoenix Eye Dim Sum" because, when viewed from above, it resembles a steaming eye. We have reinterpreted this classic, usually meat-filled snack into a vegan version with various vegetables, glass noodles, and tofu. The tofu, marinated with the typical Chinese five-spice seasonings, gives the Dim Sum a unique umami flavor and adds a savory touch. The dough is made from wheat starch and gets its green color from pureed spinach.
